Cucumber, yogurt & feta gazpacho

Since Mother Nature has finally given me the opportunity to suggest a refreshing dish, here’s my healthy and invigorating gazpacho recipe.
You could replace the vegetable broth with water and serve it with crostini. Voilà!

Ingredients
- 2 cucumbers, peeled
- 1/2 cup water
- 1/2 small red onion
- 1 avocado
- Juice of 1 lime
- 1/2 cup plain yogurt
- 4 mint leaves
Replacement optionsor other herb of your choice
- Handful of fresh cilantro

- 3.5 oz feta cheese, crumbled
- Salt and pepper, to taste
Steps
- Place all the ingredients in a food processor and process until smooth. Add water if necessary.
- Season generously and serve with feta cheese.
Tips & tricks
You can add maple syrup for a sweet twist, or Tabasco sauce to give it a little kick, if you wish.
