Date & nut bites

This healthy recipe can be made ahead of time and will fully satisfy your munchies.
Whenever I’m lacking the time or energy to make perfect squares—I admit they’re a lot of work—I roll small balls. They’re just as pretty and delicious.

Ingredients
- 14 oz Medjool dates, pitted
- 1/2 cup store-bought orange juice
Replacement optionsor juice of 1 orange
- 1 tablespoon butter
- 1/4 cup almonds, roughly chopped
Replacement optionsor other nut of your choice
- 1/4 cup Rice Krispies
- Shredded coconut, as needed
Steps
- Heat the butter, orange juice, and dates in a saucepan over medium heat for 5–10 minutes.
- Using a hand mixer, purée the mixture and transfer to a bowl. Let cool for a few minutes.
- Add the almonds and Rice Krispies® and refrigerate for an hour or so.
- Shape the bites or squares (see tip below) using 1 tbsp for each and roll in shredded coconut.
- Refrigerate until the bites are firm and serve. Store in the refrigerator
Tips & tricks
To make squares, spread the mixture in a greased square baking dish. Refrigerate. Cut into squares once the mixture is cool.
