Green tea, white chocolate & clementine Tiramisu

I don’t know why, but every time I cook up something that has Matcha in it, people talk! Well, I kind of get it, the colour can be pretty intense, but I love the vibes it gives this dessert.
If this is your first Tiramisu, I’d like to insist on the cookie dunking method: it’s a very quick dunk. If you wait too much, they will get soagy and will crumble. A quick dunk and then you lay them out in the bowl.

Ingredients
- 1 1/4 cup of water
- 2 tablespoons of honey

- 4 bags of green tea

- 2 cups of mascarpone cheese (1 475 g container)
- 1 (100 g) white chocolate bar, melted
- 1 cup of 35 % whipping cream
- 20 lady fingers cookies
- 4 clementines, peeled then quartered and cut in half
- 2 tablespoons of Matcha powder
Steps
- Heat the water and honey in the microwave. Add the tea to the hot water and infuse for 5 minutes. Remove the tea bags, and set aside.
- Soften the mascarpone cheese with a spatula in a large bowl. Add the melted white chocolate and stir until well-combined.
- Whisk the cream in another bowl, then slowly add to the mascarpone mix. Refrigerate.
- Dunk the cookies for 2 seconds in the green tea then line the bottom of a rectangle 10 x 7” pan with them.
- Cover the cookies with half the mascarpone mix, then top with the clementines and sprinkle with Matcha tea.
- Repeat the 4th step with the remaining cookies and cream mix. Sprinkle with Matcha tea once again.
- Refrigerate for an hour, then serve with a spoon.
