Mint, lemon & olive haddock en croûte

Ingredients
- 4 (200 g each) haddock filets
Crust
- 3/4 cup of panko breadcrumbs
- 1/4 cup Kalamata olives, pitted and finely sliced
- 1/4 teaspoon of garlic powder
- 1/4 cup of fresh mint leaves, chopped
- ½ a lemon’s zest
- 1/4 cup of mayonnaise
- 1 teaspoon of Sriracha sauce (or any other spicy sauce)
- Salt & pepper, as preferred
Steps

Preheat the oven at 400°F and place the rack at the center of it. Line a baking sheet with parchment paper, then set aside.

Mix all the « en croûte » ingredients in a bowl then pour over the haddock filets.

Lay the haddock onto a baking sheet then bake for 8 to 10 minutes depending on the fish’s thickness. Quickly grill the fish to give the crust a nice golden color.

Serve on pilaf rice.
