Prune & star anise ribs

Ingredients
- 1 cup of chopped prunes
- 1 cup of warm water
- 3 lb of ribs, cut in pieces (2-3 ribs per piece)
- 1 (596 ml) can of crushed tomatoes
- 2 cups of beef broth
- 1 cup of hoisin sauce
- 1/2 cup of brown sugar
- 3 star anise
- 4 garlic cloves, peeled & crushed
- A cube of ginger, about 1 cm wide, peeled
- A cinnamon stick
- Salt & pepper, as preferred
Steps
- Add chopped prunes to the cup of warm water and let sit for 10 minutes.
- Pour the prunes into the crock pot, then add the remaining ingredients. Coat the ribs with the sauce entirely.
- Cover and cook over low heat for 6 to 8 hours.
- Remove the ribs, then reduce the sauce over high heat for 10 to 12 minutes, or until it thickens.
